  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 large carrots, peeled and cut into chunks
  • 4 large potatoes, peeled and cut into chunks
  • 2 cups pearl onions, peeled
  • 2 cups mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold water
  • Fresh parsley, chopped (for garnish)


Instructions :

  1. Brown the Beef:
  2. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the beef in batches, searing until browned on all sides. Remove the beef and set aside.
  3. Sauté Vegetables:
  4. In the same pot, add the remaining tablespoon of olive oil. Add the chopped onions and garlic, cooking until softened, about 5 minutes.
  5. Deglaze the Pot:
